Thanks to paying the sort of microscopic attention to detail that makes a room beautiful, welcoming, picture postcard perfect, and serene, Ms Grace and her partner, Eugene Brennan, have survived the slump – they opened in 2008 – survived the snow storms in the winter, and the Brown Bear at Two Mile House has come through with an enviable reputation as a darling destination with demon cooking. For many food lovers, this is the County Kildare destination of choice.
The other secret Jean and Eugene understand is to cook the food that people like to eat – pork belly with cider onions, pearl barley and cabbage as a Sunday lunch main course; flat iron steak with rosemary fries when you are having a beer in the bar; turbot with artichoke, truffle and chicken wing when it’s Saturday night and you are all dressed up and ordering a good bottle of Montmirail Gigondas to make the night swing. Great service makes everything run smooth as clockwork, and the food, the service and the value will have you booking a return trip even before you are out the door.
