He’s a cook who will reach into his West Coast repertoire and offer you smoked Inisboffin mutton, paired with a rowan jelly, or he might make a mighty trio with Achill Island oysters, Aran island prawns and Killary Fjord mussels. His cooking is particularly alive to the riches of the Wild Atlantic Way, especially the simple things of the garden like turnips, and wild garlic, and sorrel. The staff in BotC perfectly match Mr Flaherty’s high-energy, soulful food, and serve his plates with great charm and efficiency. This is a smashing restaurant, and a star of the best city to eat in Ireland.
