Ashton’s is one part of the trinity of excellent gastropubs that includes Harte’s of Kildare, and the Dew Drop Inn in Kill, Co Kildare. The three destinations are unified by a confident stylishness, excellent service, and wise and discriminating management from Ronan Kinsella and Paul Lenehan. Mr Kinsella and Mr Lenehan know that their customers have simple tastes: they just want to enjoy delicious foods, excellent craft beers, and slick service, and all of this in a handsome, commodious room. So, that is what they provide in Ashton's, with smart contemporary cooking at the top of the list: beetrot and gin cured salmon with sourdough and quail’s egg; chicken wings with Crozier Blue dip; Pigs on the Green pork rack with champ and Jane Russell’s black pudding; Ashton’s steak burger with smoked bacon; saffron rice pudding. This is confident, enjoyable, and well-sourced cooking that hits all the pleasure principles. And, if you are lucky enough not to be driving, they have the best Irish craft beers, whiskeys and gins.
