Aqua opened its doors on December 31st, 1999 and, since that very first day, it has offered its many guests all the virtues of a serene, professional, confident restaurant. The end of the pier room offers achingly glorious views out across to Ireland’s Eye, but when those Aqua signature dishes begin to arrive at the table, you will only have eyes for the food – Carlingford oysters mignonette; Dublin Bay prawns with Guinness bread; lobster with skinny chips, garlic butter and Aqua garden salad; Dover sole meuniere; the classic seafood platter; sticky toffee pudding with vanilla ice cream. Aqua has succeeded so well because it offers us nothing less than an archetype of sophisticated, elegant and understated dining, with assured and mature cooking and lovely wines, in a gorgeous room. It’s a food lovers dream made real.
