Our theme for this Megabites isn’t just a quintet of fantastic destinations where you will find great modern Irish cooking and hospitality – from Easky to Belfast to Lisburn to Salthill to Glasthule in south County Dublin.
Nope, this Megabites is also about the act of curation, about people carrying on the baton of the culinary arts as they rework and reinterpret the influences that have shaped their style, whether they are making pea soup in Sligo, or salt and chilli squid in Belfast (almost the signature dish of the city at this stage), or the country’s best crispy quesadilla.
So, this is a Tribute Megabites, a Standing-on-the Shoulders Megabites, a nod to the culinary pathfinders who wrote the book. Just the thing as we welcome the August sunshine, and a month of great summer cooking and eating.
